Wow!!!!! No posting in a long time. I've been really busy with cookies and cakes. There's not a lot that scares me in the baking world. Well, maybe there are a few things I've yet to tackle, but gluten free can be daunting. I've had just OK gluten free desserts and I've had some really bad gluten free cakes and cookies.
We just celebrated three college graduates in my family. We are all so proud of all three of them for putting in the hard work and getting it done. Our family had a big party for them. My nephew is gluten free and rarely, if ever, gets dessert. When he does, it's hit and miss. I thought this was a perfect time to bake a gluten free cake for him.
I decided to try Cup4Cup brand of gluten free flour. It's not cheap, so I was really hoping it all worked out.
tI used my tried and true chocolate cake recipe and crossed my fingers. I was a little afraid of the batter, because I could tell that it was not what it usually is like. It was kind of "gloppy". Is that a word? I don't know, but it fits the description. It baked up like one of my regular cakes. I think it took a little longer to bake, but there was no other difference. I frosted it with my delicious buttercream and couldn't wait to try some. Let me tell you, It was AMAZING!! Tasted just like a regular cake. If you've ever had a bad gluten free dessert, you know what I mean. The goal is not to have any know it was gluten free. I think I succeeded.
I usually don't serve very plain looking cakes like this one, but I really wanted to be sure that it was totally gluten free and I wasn't sure if my sprinkle mixes were gluten free or not. Next, I'll look into some gluten free decorations. The main thing is, is that he loved it and I was so happy to sweeten his already sweet day.
Sorry for the messy picture, but it's the only one I got, before this cake was gone. I stopped telling people it was gluten free, because you really could not tell the difference.
Next step will be to try a gluten free cake, using my vanilla recipe. As I said, this chocolate cake recipe is very forgiving and so delicious.
